过乙酸是一种强消毒剂,所以它成为食品和饮料行业的优良的消毒剂。使用过乙酸可以消毒食品加工厂中的设备、巴氏杀菌器、池子、管线、蒸发器、填装机和与食品的接触表面等。它对去除生产高糖产品的饮料厂中使用的防渗微生物具有特殊的效果。在纸浆和造纸行业使用过乙酸来去除木质素并且漂白。
在过乙酸DDPD测量方法中,用过量的碘化钾来处理样品。过氧乙酸将碘盐氧化成碘。然后碘氧化DDPD(DPD的甲基取代产物),产生一种紫色的产物,(数量直接同样品中的过乙酸的浓度成比例)。测量结果用ppm过乙酸表示。
如果样品中氧化剂的溶度和过乙酸相当时,例如卤素、臭氧、三价铁离子、二价铜离子,都会使测量结果偏高。但过氧化氢不会产生干扰。
